This caviar comes from a hybrid sturgeon, a cross between Huso Dauricus and Acipenser Schrenckii. Huso is part of the Beluga family, while Acipenser belongs to the Asetra family. In short, this is a hybrid between a Beluga-like and an Asetra-like sturgeon.

The farm in China is located by a vast natural lake, where some areas reach a depth of 200 meters (!!). The sturgeons are raised in ponds and later released into the lake at an older age. In the lake, the sturgeons can swim freely and forage for food on their own, which has a very positive impact on the taste and quality of the caviar.
