The Baby Sardines from House of Caviar & Fine Food are of the Pilchardus species, the tastiest and most prized variety. They are caught in the Atlantic Ocean using purse seines. When a school of sardines is located, the net is cast, and the boat makes a 360-degree turn to encircle it.
This method has been used for many years. Today, the boats are larger and more powerful, and the nets are of better quality, but the technique has changed little over time.
The flavor of Atlantic sardines is more intense than that of sardines caught in the Mediterranean, due to the colder and more turbulent waters here, which make the fish exceptionally flavorful.
